The purpose of the study was to describe the food intake of Dutch Nutrition and Dietetic (ND) students compared to the Dutch Recommended Dietary Allowances (RDA) and the National Food Consumption Survey (NFCS).

Background: Parents influence their children’s nutrition behavior. The relationship between parental influences and children’s nutrition behavior is often studied with a focus on the dyadic interaction between the parent and the child. However, parents and children are part of a broader system: the family. We investigated the relationship between the family nutrition climate (FNC), a family-level concept, and children’s nutrition behavior. Methods: Parents of primary school-aged children (N = 229) filled in the validated family nutrition climate (FNC) scale. This scale measures the families’ view on the consumption of healthy nutrition, consisting of four dierent concepts: value, communication, cohesion, and consensus. Parents also reported their children’s nutrition behavior (i.e., fruit, vegetable, water, candy, savory snack, and soda consumption). Multivariate linear regression analyses, correcting for potential confounders, were used to assess the relationship between the FNC scale (FNC-Total; model 1) and the dierent FNC subscales (model 2) and the child’s nutrition behavior. Results: FNC-Total was positively related to fruit and vegetable intake and negatively related to soda consumption. FNC-value was a significant predictor of vegetable (positive) and candy intake (negative), and FNC-communication was a significant predictor of soda consumption (negative). FNC-communication, FNC-cohesion, and FNC-consensus were significant predictors (positive, positive, and negative, respectively) of water consumption. Conclusions: The FNC is related to children’s nutrition behavior and especially to the consumption of healthy nutrition. These results imply the importance of taking the family-level influence into account when studying the influence of parents on children’s nutrition behavior. Obesity and other lifestyle-related diseases are, amongst others, the result of an unbalanced diet and lifestyle. Excessive intake of energy, salt, saturated fat and sugar are leading to increased risk of chronic diseases, such as cardiovascular diseases, cancer and diabetes (WHO/FAO). Therefore, a healthier food intake (diet) is needed. But when is a food product healthier? From a nutritional perspective it is clear: the lower the levels of nutrients with a negative public health impact, the better the product fits in a healthy diet. However, when it comes to improving the health impact of the food supply through reformulation, other aspects are important as well. This article describes the ‘framework for product reformulation’, which integrates four essential disciplines: Nutrition & health, Foodtechnology, Legislation and Consumer perspective.

Global food systems need to become more sustainable, resilient and inclusive. To accelerate this transition, there is a need for scaling innovative strategies for improved Food and Nutrition Security (FNS), particularly for the poor and marginalised. Scaling, however, is not a straightforward or value-free process. The synthesis study examined which dilemmas influence Research for Impact projects that seek to contribute to FNS outcomes at scale, and how blind spots in scaling research and practice are tied to these dilemmas. Being aware of and tackling these blind spots at an early stage contributes to ‘responsible scaling’: not only focusing on technical and socio-economic, but also on ethical considerations about who will benefit or lose out. The findings presented in the full paper are based on insights from ten interdisciplinary research projects funded by NWO-WOTRO that were carried out in countries in East, Southern and the Horn of Africa between 2014–2020.

Citizens living in food poverty can easily get caught up in a vicious cycle. Socio-economically disadvantaged people often rely on food assistance and are more likely to suffer from diseases caused by unhealthy diets, such as diabetes. They may also experience isolation and lack social networks, as they do not have the financial means to participate in social life. Moreover, this group is often overlooked in decision-making processes regarding healthy and sustainable food environments. To create equitable food environments in urban areas, it is crucial to incorporate the everyday challenges and needs of socioeconomically disadvantaged people. In our collaborative research, we explore the needs of socioeconomically disadvantaged people regarding a healthy and sustainable diet in Switzerland and the Netherlands. The aim is also to develop, in a participatory way, ideas on how to create more socially just and inclusive food environments.Keywords: food poverty, food environments, social participation, participatory action research

Supply chains have inherent risk given the number of actors that interface. While there are some chains that have low frequencies of unfavorable events, many continuously face uncertainty. Food production has many uncertainties along the global supply chain. The global nature of the large logistical networks increases its complexity. Two main sources of uncertainty arise: External and internal to the SC. External factors mainly come from nature (such as "El Niño" phenomenon) and from human activities (such as food and nutrition policy and standards). Internal factors mainly come from operations such as a cold chain disruption. Thus, one needs to minimize risk and improve resilience in order to achieve food security and sustainability. It is then imperative that risk management practices be integrated into the supply chain design and management process. This chapter presents an overview of the main risks involved in global food supply chains, as well as some techniques for risk management.

OBJECTIVES: To compare the dietary intakes of Dutch nutrition and dietetics students with the Dutch RDA and the Dutch National Food Consumption Survey (DNFCS), and to assess whether dietary intake changes during education.DESIGN: Cross-sectional and longitudinal research (2004-2010).SETTING: Data collection by 7 d dietary record and questionnaire.SUBJECTS: Dutch nutrition and dietetics students.RESULTS: Three hundred and fifty-two first-year and 216 fourth-year students were included. One hundred and thirty-three students in three cohorts were assessed twice. Of first-year students, >80 % met the RDA for all macronutrients. Of these students only 37 % met the RDA for fibre and in 43 % intake of saturated fat was too high. Fourth-year students more often met the RDA for fruits (55 %) and vegetables (74 %) compared with first-year students (32 % and 40 %, respectively). Intake of fruits and vegetables of both first- and fourth-year students was much higher than that of DNFCS participants (where 2 % and 7 %, respectively, met the corresponding RDA). Only <25 % of fourth-year students met the RDA for Fe, Se and vitamin D. In the cohorts, dietary intake for all macronutrients stabilised from the first to the fourth year (>80 %). Intakes of dietary fibre, Ca, Mg, Se, riboflavin, niacin, fruits, vegetables and fish improved significantly during education.CONCLUSIONS: Dietary intake of nutrition and dietetics students is much better than that of DNFCS participants and improved during education. However, there is still a gap between actual dietary intake and the RDA, especially for Fe, Se and vitamin D.

Het lectoraat wil komen tot gezonde en veilige voedingsmiddelen voor doelgroepen die verschillen in voedingsbehoefte. Voeding is een ketenproduct. Verduurzaming van die keten is een tweede zwaartepunt. Een derde taak ligt in de netwerkfunctie en het steunen van regionale ontwikkelingen. Het lectoraat is actief in het toepassen van fundamentele kennis samen met het MKB. Anne Schaafsma is sinds 1978 in dienst bij FrieslandCampina en bekleedt sinds 2000 de functie van Senior Scientist Nutrition. Schaafsma is gespecialiseerd in kindervoeding en de invloed die het heeft op de ontwikkeling van hersenen en immuunsysteem. Als lector is Anne Schaafsma voor 2,5 dag per week bij Van Hall Larenstein in Leeuwarden gedetacheerd. Binnen het lectoraat werken de lector Food Safety (Anne Schaafsma) en associate lector Health & Food (Feike van der Leij) nauw samen. De lectoren willen fundamentele kennis benutten om te komen tot gezondere voedingsmiddelen voor doelgroepen die verschillen in leeftijd en voedingsbehoefte. Het betreft vooral kennis over moleculaire processen in het menselijk lichaam en de invloed van voedingscomponenten daarop.

Equitable access to healthy food is a critical challenge in urban Asia. Food safety governance promotes modern supermarkets over more traditional markets, but supermarkets are associated with unequal access to food. This study investigates how retail policies driven by food safety impact the diets of the urban poor in Hanoi, Vietnam. We do this by linking food retail infrastructures with the food shopping practices and measured dietary intake of 400 women. Our results reveal sub-optimal dietary diversity and reliance on foods sourced through traditional markets, which do not provide formal food safety guarantees. Modern channels supply formal food safety guarantees, but are mainly frequented for purchasing ultra-processed foods. The paper uncovers a conflicting duality governing food security and suggests that the public responsibility for ensuring access of the poor to nutritious and safe foods requires a more diverse retail policy approach.
