We explore the role of restaurants and food events in promoting local and regional gastronomy in the Minho region in Northern Portugal. Interviews with restaurant owners and event organizers in this mainly rural region reveal that innovation is driven mainly by changing consumer tastes, but also con-strained by consumer expectations of low prices. Restaurants maintain a family-run structure, also due to a lack of human resources. The main thrust of innovation lies in creating a convivial atmosphere, but there is less emphasis on locally produced food ingredients. In the long run this may undermine the regional food culture and its authenticity, despite the perceived importance of tradition.

In the production of fermented foods, microbes play an important role. Optimization of fermentation processes or starter culture production traditionally was a trial-and-error approach inspired by expert knowledge of the fermentation process. Current developments in high-throughput 'omics' technologies allow developing more rational approaches to improve fermentation processes both from the food functionality as well as from the food safety perspective. Here, the authors thematically review typical bioinformatics techniques and approaches to improve various aspects of the microbial production of fermented food products and food safety.
Binnen ‘Zilte Parels’ is door de onderzoeksgroep Aquacultures in Deltagebieden met en voor regionaal MKB en de Wateropleiding Delta Academy, nieuwe kennis op het gebied van ‘Seafood’ en ‘Seafood technology’ opgedaan. Dit nieuwe kennisgebied wordt steeds belangrijker voor de regio en daarmee de onderzoeksgroep. Het is van belang om deze kennis verder uit te bouwen om de sector beter te bedienen aan de hand van verschillende onderzoeksprojecten. Ook is een promotie onderzoek gestart op dit onderwerp. Middels deze Top-up aanvraag willen wij de eerste stappen zetten om het onderzoek op deze thematiek verder en structureel vorm te geven binnen de onderzoeksthema’s van de onderzoeksgroep. In dit project worden de volgende activiteiten uitgevoerd: 1) publicatie in een wetenschappelijke journal en actieve bijdragen aan een wetenschappelijke congres. 2) bezoek aan een buitenlandse universiteit (Louisiana State University - USA) gericht op verdere samenwerking. De activiteiten worden uitgevoerd in de periode 01 september 2016 tot en met 31 augustus 2017.
