Postprandial high glucose and insulin responses after starchy food consumption, associated with an increased risk of developing several metabolic diseases, could possibly be improved by altering food structure. We investigated the influence of a compact food structure; different wheat products with a similar composition were created using different processing conditions. The postprandial glucose kinetics and metabolic response to bread with a compact structure (flat bread, FB) was compared to bread with a porous structure (control bread, CB) in a randomized, crossover study with ten healthy male volunteers. Pasta (PA), with a very compact structure, was used as the control. The rate of appearance of exogenous glucose (RaE), endogenous glucose production, and glucose clearance rate (GCR) was calculated using stable isotopes. Furthermore, postprandial plasma concentrations of glucose, insulin, several intestinal hormones and bile acids were analyzed. The structure of FB was considerably more compact compared to CB, as confirmed by microscopy, XRT analysis (porosity) and density measurements. Consumption of FB resulted in lower peak glucose, insulin and glucose-dependent insulinotropic polypeptide (ns) responses and a slower initial RaE compared to CB. These variables were similar to the PA response, except for RaE which remained slower over a longer period after PA consumption. Interestingly, the GCR after FB was higher than expected based on the insulin response, indicating increased insulin sensitivity or insulin-independent glucose disposal. These results demonstrate that the structure of wheat bread can influence the postprandial metabolic response, with a more compact structure being more beneficial for health. Bread-making technology should be further explored to create healthier products.

There is a strong relation between food and identity. Especially when people move to another country, traditional food (or simply food from their country of origin), symbolizes a link with culture, communityand ethnic identity. As people move around the globe they introduce new foods in the places they land. Almere is becoming one of the largest majority minority cities of the Netherlands. Walking around thecity, the diversity of food ingredients and eating cultures as shown in shops and restaurants is immediately clear. The aim of this project was to get an insight into the diets of the residents of Almere so as to learn about eating patterns in a multicultural city and how multiculturality affects the diets of both newcomers and people who have been living here for generations.

The focus of my research is how Bartholomeus Guesthouse (BG), founded in 1407 by Willem van Abcoude, has organized care over more than 600 years for the elderly and elderly sick people in the Centre of Utrecht. After the reorganization of 1817 -by Royal Law- the 7 (9) Guesthouses were merged to one Board called “College van Regenten der Vereenigde Gods-en Gasthuizen” .They have had their domicile in Bartholomeus Guesthouse. This Guesthouse survived as elderly care centre on particular foundation, which has meant until today that people from different religions were welcome. The properties of the other guesthouses came under supervision of the Board of “Vereenigde Gods-en Gasthuizen”. The heritage of the other foundations was , in terms of property and land, considerable. In my paper I will present the following items: -An inventarisation of the situation after 1817 and the ‘cameren’ (vrij woningen) of the different guesthouses in Utrecht and what their (living) conditions were at that time; -the Policy of the Board supervising the Free Houses/ Cameren for Elderly during this area; the observation of the archive manager S.Muller Fz.is good illustration of the situation in 1900; -the inhabitants of the ‘vrij woningen’; the selection and the rules as part of the social housing policy; - a more general analysis: the policy of poor relief and the debate of who had to take care of the poor? - all subjects give an answer to the question whether or not poor relief can be regarded as a safety valve for the (lower) middle class, in the ninetheenth century.

High consumption of carbohydrates is linked to metabolic syndrome, possibly via the endogenous formation of advanced glycated end-products. Many Dutch elementary school children have a carbohydrate intake of >130g/day, the estimated minimum requirement. In this observational study, 126 Dutch elementary school children (5-12y of age) from two schools differing in frequency of gym lessons (2 or 5 times a week) were included. In all participants, height, weight, waist circumference, autofluorescence of skin glycated end-products (AGE-score), sports activity and carbohydrate consumption were recorded once. Sports activities in leisure time differentiated participants in ‘sportsmen’ and ‘non-sportsmen’. Carbohydrate intake and AGE score were positively associated in non-sportsmen (p<0.003), but negatively in sportsmen (p<0.002). In sportsmen, but not in non-sportsmen (p>0.50), a positive association was found (p<0.002) between carbohydrate intake and subject age. The intake of total carbohydrate and carbohydrates from juices and soft drinks was lower (p<0.001) at the Wassenberg School relative to the Alexander School. Based on waist to height ratio, >95% of the children had normal fat mass. No correlations were found between waist to height ratio or BMI and carbohydrate intake. Waist to height ratio was positively associated with BMI (p<0.001)) and subject age (p<0.001). Of all principal parameters, AGE score is most affected by being sportsmen or not (p<0.001). This study indicates that an increased intake of carbohydrates can be counteracted by sufficient physical activity (>2.5 hours per week). This implies that skin autofluorescence is a fast and non-invasive method to screen children for life style.

The poem differs from most Eulenspiegel literature in two key respects. First, it treats the figure as a narrator rather than a character, and second, it seems designed for performance rather than simple recital. We offer here an English translation of this remarkable piece, lightly annotated throughout.

The Nutri-Score front-of-pack label, which classifies the nutritional quality of products in one of 5 classes (A to E), is one of the main candidates for standardized front-of-pack labeling in the EU. The algorithm underpinning the Nutri-Score label is derived from the Food Standard Agency (FSA) nutrient profile model, originally a binary model developed to regulate the marketing of foods to children in the UK. This review describes the development and validation process of the Nutri-Score algorithm. While the Nutri-Score label is one of the most studied front-of-pack labels in the EU, its validity and applicability in the European context is still undetermined. For several European countries, content validity (i.e., ability to rank foods according to healthfulness) has been evaluated. Studies showed Nutri-Score's ability to classify foods across the board of the total food supply, but did not show the actual healthfulness of products within different classes. Convergent validity (i.e., ability to categorize products in a similar way as other systems such as dietary guidelines) was assessed with the French dietary guidelines; further adaptations of the Nutri-Score algorithm seem needed to ensure alignment with food-based dietary guidelines across the EU. Predictive validity (i.e., ability to predict disease risk when applied to population dietary data) could be re-assessed after adaptations are made to the algorithm. Currently, seven countries have implemented or aim to implement Nutri-Score. These countries appointed an international scientific committee to evaluate Nutri-Score, its underlying algorithm and its applicability in a European context. With this review, we hope to contribute to the scientific and political discussions with respect to nutrition labeling in the EU.
