Deze casestudie geeft inzicht in verschillende soorten kennis die kenmerkend zijn voor applied design research. Er wordt onderscheid gemaakt tussen kennis over de huidige situatie, over wenselijke alternatieven en over effectieve oplossingen om daar te komen. Ofwel, kennis hoe het is, kennis over hoe het kan zijn en kennis over hoe het zal zijn als we effectieve oplossingen toepassen. Elk van deze soorten kennis heeft andere kwaliteitscriteria.

Final report of the Evidence-based Food System Design project (EFSD). This research project aimed at building a data-driven mapping of the Amsterdam Metropolitan Food System, as an evidence base for vision and scenario development, policymaking and other initiatives aimed at transitioning to a more sustainable regional food system.

Urban communities are particularly vulnerable to the future demand for food, energy and water, and this vulnerability is further exacerbated by the onset of climate change at local. Solutions need to be found in urban spaces. This article based around urban design practice sees urban agriculture as a key facilitator of nexus thinking, needing water and energy to be productive. Working directly with Urban Living Labs, the project team will co-design new food futures through the moveable nexus, a participatory design support platform to mobilize natural and social resources by integrating multi-disciplinary knowledge and technology. The moveable nexus is co-developed incrementally through a series of design workshops moving around living labs with the engagement of stakeholders. The methodology and the platform will be shared outside the teams so that the knowledge can be mobilized locally and globally.

This paper provides a management perspective of organisational factors that contributes to the reduction of food waste through the application of design science principles to explore causal relationships between food distribution (organisational) and consumption (societal) factors. Qualitative data were collected with an organisational perspective from commercial food consumers along with large-scale food importers, distributors, and retailers. Cause-effect models are built and “what-if” simulations are conducted through the development and application of a Fuzzy Cognitive Map (FCM) approaches to elucidate dynamic interrelationships. The simulation models developed provide a practical insight into existing and emergent food losses scenarios, suggesting the need for big data sets to allow for generalizable findings to be extrapolated from a more detailed quantitative exercise. This research offers itself as evidence to support policy makers in the development of policies that facilitate interventions to reduce food losses. It also contributes to the literature through sustaining, impacting and potentially improving levels of food security, underpinned by empirically constructed policy models that identify potential behavioural changes. It is the extension of these simulation models set against a backdrop of a proposed big data framework for food security, where this study sets avenues for future research for others to design and construct big data research in food supply chains. This research has therefore sought to provide policymakers with a means to evaluate new and existing policies, whilst also offering a practical basis through which food chains can be made more resilient through the consideration of management practices and policy decisions.

Food production has put enormous strain on the environment. Supply chain network design provides a means to frame this issue in terms of strategic decision making. It has matured from a field that addressed only operational and economic concerns to one that comprehensively considers the broader environmental and social issues that face industrial organizations of today. Adding the term “green” to supply chain activities seeks to incorporate environmentally conscious thinking in all processes in the supply chain. The methodology is based on the use of Life Cycle Assessment, Multi-objective Optimization via Genetic Algorithms and Multiple-criteria Decision Making tools (TOPSIS type). The approach is illustrated and validated through the development and analysis of an Orange Juice Supply Chain case study modelled as a three echelon GrSC composed of the supplier, manufacturing and market levels that in turn are decomposed into more detailed subcomponents. Methodologically, the work has shown the development of the modelling and optimization GrSCM framework is useful in the context of eco-labelled agro food supply chain and feasible in particular for the orange juice cluster. The proposed framework can help decision makers handle the complexity that characterizes agro food supply chain design decision and that is brought on by the multi-objective nature of the problem as well as by the multiple stakeholders, thus preventing to make the decision in a segmented empirical manner. Experimentally, under the assumptions used in the case study, the work highlights that by focusing only on the “organic” eco-label to improve the agricultural aspect, low to no improvement on overall supply chain environmental performance is reached in relative terms. In contrast, the environmental criteria resulting from a full lifecycle approach is a better option for future public and private policies to reach more sustainable agro food supply chains.

Moral food lab: Transforming the food system with crowd-sourced ethics

Making food packaging more sustainable is a complex process. Research has shown that specific knowledge is needed to support packaging developers to holistically improve the sustainability of packaging. Within this study we aim to provide insights in the various tradeoffs designers face with the aim to provide insights for future sustainable food packaging (re)design endeavors. The study consists of analyzing and coding 19 reports in which bachelor students worked on assignments ranging from (1) analyzing the supply chain of a food product-packaging combination to (2) redesigning a specific food packaging. We identified 6 tradeoffs: (1) Perceived Sustainability vs. Achieved Sustainability, (2) Food Waste vs. Sustainability, (3) Branding vs. Sustainability, (4) Product Visibility vs. Sustainability, (5) Costs vs. Sustainability, and (6) Use Convenience vs Sustainability. We compared the six tradeoffs with literature. Two tradeoffs can be seen as additional to topics mentioned within literature, namely product visibility and use convenience. In addition, while preventing food waste is mentioned as an important functionality of food packaging, this functionality seems to be underexposed within practice.

Citizens living in food poverty can easily get caught up in a vicious cycle. Socio-economically disadvantaged people often rely on food assistance and are more likely to suffer from diseases caused by unhealthy diets, such as diabetes. They may also experience isolation and lack social networks, as they do not have the financial means to participate in social life. Moreover, this group is often overlooked in decision-making processes regarding healthy and sustainable food environments. To create equitable food environments in urban areas, it is crucial to incorporate the everyday challenges and needs of socioeconomically disadvantaged people. In our collaborative research, we explore the needs of socioeconomically disadvantaged people regarding a healthy and sustainable diet in Switzerland and the Netherlands. The aim is also to develop, in a participatory way, ideas on how to create more socially just and inclusive food environments.Keywords: food poverty, food environments, social participation, participatory action research
