Dit boek met portretten in de retail laat zien hoe mensen in de uitoefening van hun beroep verschillen en wat dit betekent voor de ontwikkeling van future-proof skills en kwaliteiten van winkelmedewerkers.

Binnen het project Future-Proof Retail werden acht labformules ontworpen en getest. Het EHBR(etail) lab bleek een van de drie succesformules te zijn: alle betrokken stakeholders hebben deze vorm van samenwerking beoordeeld als heel positief. Tussen 2018 en 2020 vonden zes edities van het lab plaats in verschillende gemeenten in Zuid-Holland. Hierbij had De Haagse Hogeschool de leiding. Onder regie van de opleiding Ondernemerschap & Retail Management werden derde jaarsstudenten via een minor ingezet. De bedoeling van deze handleiding is om te zorgen voor een opschaling van het EHBR(etail) lab in meerdere Nederlandse regio’s en in samenwerking met andere hogescholen en mbo-onderwijsinstellingen. Hierbij is het belangrijk om te realiseren dat de regierol niet alleen specifieke expertise en ervaring in businessmanagement vraagt, maar ook een serieuze investering in tijd en geld. Bovendien is intensieve inzet van hbo-studenten nodig: twee dagen per week gedurende een semester, of minimaal een onderwijsblok van tien weken. Tijdens het living lab worden retailers geactiveerd en kan er een nieuw of aangepast businessmodel ontstaan. Zowel voor individuele retailers of een heel winkelgebied. De verschillende vragen die wor den opgepakt in een EHBR(etail) lab, zijn veel breder dan de vragen bij andere labs. Het inhoudelijke proces is compleet anders dan bij een Hype lab en Lab Circularity, namelijk iteratief - hierbij verwij zen wij graag naar de handleidingen van deze twee labs. Studenten doen met de eerste (hulp)vraag van de individuele retailer of van een heel winkelgebied als startpunt een empathisch onderzoek naar de omgeving. Ze gaan op zoek naar de vraag achter de vraag: wat is nu eigenlijk het probleem of de uitdaging van de ondernemer of het collectief? In het EHBR(etail) lab werken hbo-studenten, bij voorkeur samen met mbo-studenten, met onder zoekers en het bedrijfsleven aan innovatief onderzoek. Dat gebeurt in een zogenaamde quadruple helix-omgeving (zie figuur 1). In cocreatie ontwikkelen de verschillende partijen praktische tools. Gemiddeld nemen vijf tot twintig retailers deel aan een lab. Samen met de studenten doen ze bijvoorbeeld onderzoek naar de relevantie van de deelnemende retailers voor bestaande en nieuwe klanten. De studenten lichten bestaande businessmodellen inclusief ‘customer journey’ door. Het lab werkt in sprints van zes à tien weken, en de deelnemers hanteren de methode van design thinking. Het succes van het lab bleek namelijk in grote mate samen te hangen met de design-thinking skills van de betrokken studenten en docenten. Studenten die in labs het probleem van ondernemers en medewerkers konden herkaderen (het probleem áchter het probleem boven tafel wisten te krijgen), konden veel waarde toevoegen aan het leerproces van de ondernemer. Zeker omdat zij volgens design thinking verbeterplannen ook concreet konden toepassen en uittesten in experimenten.

Reducing food waste at the consumer level is a critical component of the U.N. sustainable development goals, yet consumer behavior in this domain remains complex and multifaceted. This study extends the Theory of Planned Behavior (TPB) to develop a comprehensive model of food waste behavior in a developed economy, integrating both cognitive and structural factors that influence consumer decisions. Using survey data from 309 U.S. households, we empirically test the impact of retail strategies, perceived utilitarian food waste benefits, and holiday habits on food waste behavior. The findings reveal that retail strategies, such as promotions and packaging tactics, encourage over-purchasing, contributing to increased waste. Additionally, consumers who perceive benefits in discarding food–such as making space for fresher items or avoiding the effort of meal planning–exhibit higher food waste tendencies. Seasonal consumption patterns further amplify waste, as holiday-related shopping habits drive excessive food acquisition. These results underscore the need for interventions that address both individual decision-making processes and broader market-driven influences. By integrating structural and habitual determinants into the TPB framework, this study enhances the theoretical understanding of food waste behavior and offers practical implications for policymakers and retailers seeking to reduce consumer-level food waste.

The use of immersive technologies has changed the consumption environment in which retailers provide services. We present findings from a study designed to investigate consumer responses toward a $17 million AI-embedded mixed reality (MR) exhibit in a retail/entertainment complex which combines advanced technology entertainment with retail shopping. Findings from our study demonstrate that the quality of AI (i.e., speech recognition and synthesis via machine learning) associated with an augmented object increases MR immersion associated with spatial immersion, MR enjoyment, and consumers’ perceptions of novel experiences. Collectively, these increase consumer engagement, and positively influence behavioral responses—specifically, purchase intentions and intentions to share experiences with social groups. Overall, findings from this study show that interactive AI and MR technology open new avenues to promote consumer engagement.

The Internet is changing the way we organise work. It is shifting the requirement for what we call the ‘schedule push’ and the hierarchical organisation that it implies, and therefore it is removing the type of control that is conventionally used to match resources to tasks, and customer demand to supplies and services. Organisational hierarchies have become too expensive to sustain, and in many cases their style of coordination is simply no longer necessary. The cost complexity of the industrial complex starts to outweigh the benefits and the Internet is making it redundant.

Recent developments in digital technology and consumer culture have created new opportunities for retail and brand event concepts which create value by offering more than solely marketing or transactions, but rather a place where passion is shared. This chapter will define the concept of ‘fashion space’ and consumer experience, and delves into strategies for creating experiences that both align with a brand’s ethos and identity and build brand communities. It will provide insight on creating strong shared brand experiences that integrate physical and digital spaces, AR and VR. These insights can be used for consumer spaces but also for media and buyer events, runway shows, test labs and showrooms. Since its launch in 2007, international fashion brand COS has focused on creating fashion spaces that build and reinforce a COS fashion community. COS retail stores with their extraordinary architecture, both traditional and contemporary, contribute stories and facilitate intense brand experiences. Moreover, COS’ dedication to share the artistic inspirations of its people led to collaborating on interactive and multi-sensory installations which allow consumers to affectively connect to the brand’s personality and values. Thus, the brand was able to establish itself firmly in the lifestyle of its customers, facilitating and developing their aesthetics and values. An interactive full-length mirror that allows you to browse through an endless collection ofclothing and see immediately whether something fits you, including when you turn around, and which also allows you to send a picture quickly to your family and friends to hear what they think. This mirror is a technological development that is already possible and which is being introduced in fashion stores here and there. But how probable is it that this technological innovation will become a permanent feature of our shopping experience? To answer this question we shall describe the expectations that exist about the developments in shopping over the coming years. We shall then examine to what extent these developments already play a role in shopping now, in 2014. In order to maintain an overview, we shall introduce a typology based on the STOF model. All of the innovations mentioned are ultimately aimed at offering added value for the consumer, but who is that consumer and what does he or she need? An inventory of how the shopping consumer is regarded makes it clear that new perspectives are required in order to do justice to the complexity of the retail behaviour and the retail experience. Finally, we will briefly examine specific cross-media aspects of shopping, such as the multichannel strategy of retail outlets and the role of the physical store in relation to the webshop. We end by offering a research framework for the 'service encounter' in the retail process based on the concept of Servicescapes. This framework allows to chart and answer a number of essential questions surrounding the probability of innovations more systematically.

Consumers expect product availability as well as product quality and safety in retail outlets. When designing or re-designing fruit and vegetables supply chain networks one has to take these demands into consideration next to traditional efficiency and responsiveness requirements. In food science literature, much attention has been paid to the development of Time-Temperature Indicators to monitor individually the temperature conditions of food products throughout distribution as well as quality decay models that are able to predict product quality based upon this information. This chapter discusses opportunities to improve the design and management of fruit and vegetables supply chain networks. If product quality in each step of the supply chain can be predicted in advance, good flows can be controlled in a pro-active manner and better chain designs can be established resulting in higher product availability, higher product quality, and less product losses in retail. This chapter works towards a preliminary diagnostic instrument, which can be used to assess supply chain networks on QCL (Quality Controlled Logistics). Findings of two exploratory case studies, one on the tomato chain and one on the mango chain, are presented to illustrate the value of this concept. Results show the opportunities and bottlenecks for quality controlled logistics depend on product—(e.g. variability in quality), process—(e.g. ability to use containers and sort on quality), network- (e.g. current level of cooperation), and market characteristics (e.g. higher prices for better products).

Nederlandse binnensteden bevinden zich als gevolg van diverse trends – klimaat, maatschappij, demografie, economie en technologie – in een dynamisch en complex transitieproces. Deze transitie moet door samenwerkende en betrokken private en publieke stakeholders uit de binnenstad worden gemanaged om zodoende centra veerkrachtig te maken en houden. Lange tijd richtte dit binnenstadsmanagement zich vooral op operationele zaken rond de aankleding van en events in de binnenstad. Zo staat menig binnenstad in de maand december in de kerstspotlights.

Increasing students’ motivation in higher education by designing a specific curriculum has always been a challenging but very complex process. The Department of Business, Finance and Marketing (BFM) of The Hague University of Applied Sciences (THUAS) initiated a redesign of the curricula with the major goals of increasing flexibility of learning opportunities and offering students a more motivating, inspiring and richer diversity of learning experiences. In the literature of learning in higher education this has often been labeled as ‘offering extracurricular learning opportunities’. The redesign of the curriculum implies that the new one will result in an enhancement of the flexibility of the curriculum, by offering learning opportunities beyond the borders of specific programs like marketing, finance or entrepreneurship and retail management. The richness and diversity should create flexible platforms, offering students the possibility to enrich their career choices to design their own personalised career path, hopefully maximizing the possibilities for their talent development. However, very little is known about the relationship between the students’ satisfaction with extracurricular learning opportunities, aiming at the personalisation of students’ career choices, and their motivation. In this chapter we describe our research into this relationship between student motivation and learning environments. Designing a network curriculum by increasing the possibility of extracurricular learning opportunities in higher education could have a positive impact on students’ motivation when it is combined with activities to increase goal students’ commitment. This depends on teachers’ qualities to communicate the valence and instrumentality of the learning possibilities offered for the prospective work environment. This is a complex issue however. Teachers from different educational programs, even in the same domain, have a different orientation on existing learning opportunities within one specific program. Excellent coaching skills by tutors are important. These coaching skills are necessary to support students in the process of envisioning extracurricular learning opportunities when important career choices have to be made.
