This paper explores the concept of sustainable hospitality. The relevance and status of this area of enquiry are assessed by discussing the current status of the concepts involved. These discussions are then linked to progress made in sustainable hospitality both in research and practical applications in the hospitality industry. At least six principal schools of thought within hospitality are noted: hospitality science, hospitality management, hospitality studies, the "three domain school", the systems thinking school and the pragmatic tradition. This complexity and lack of clear definition are problems. The differences between sustainability and sustainable development, and between weak and strong sustainability add further complexities. This paper shows that progress in both sustainable hospitality and tourism has been limited by these problems. A series of technical, ethical and commercial problems are discussed. However, while sustainable hospitality as a research area is still in its infancy, it is concluded that it is very relevant within the wider context of sustainable tourism research, based on its impact and its specific position within the social-ecological-economic systems under investigation. Key areas of future work are suggested, notably to better understand the impacts of hospitality on the triple bottom line, and to explore systems approaches towards implementation.

Isabel Löfgren takes us to the Stockholm high-rise suburbs to show us how art projects and transnational media intermingle with the multicultural urban reality. In this book, she discusses the architecture of her project Satellitstaden, where her artistic interventions with the satellite dishes on façades highlight the voices of its inhabitants through participatory and co-generative artistic processes. In these peripheries, satellite subjects emerge, orbiting around multiple identifications, foregrounding the notion of spatial justice, the subaltern and the importance of grassroots movements.The book outlines a philosophy of hospitality in response to the turn in Europe against refugees, which Löfgren considers to be a crisis of hospitality, not a crisis of migration. Löfgren discusses the ethics that govern the relationship between guest and host, the self and Other. Who has the right to belong? On what terms? She argues for a hospitable turn in art, urban planning and media, in which guest-host relationships are performed, mediated and problematized.We urgently need to re-imagine the ethics of hospitality and habitability for the near future. The 2020 pandemic forces us to reassess our philosophy and practice of human contact, re-engineering how we relate to the Other, and what hospitality means in the face of a global halt.Isabel Löfgren is a Swedish-Brazilian artist, researcher and educator based in Stockholm and Rio de Janeiro. She is currently working at the Media and Communication Studies Department at Södertörn University in Sweden, next to her artistic practice. Her research interests include cultural politics, aesthetics, and the philosophy of diaspora in the fields of contemporary art, media philosophy, and media activism.

This study investigates factors predicting hospitality management students’ intention to enter employment in the hospitality industry upon graduation. Survey data were collected from 591 hospitality management students in a hotel management school in the Netherlands. Results of multiple regression analyses showed that study progress negatively predicted, while preferences for large organisations, engaging work content and growth opportunities positively predicted students’ intention to enter the hospitality industry. Supplementary analyses further revealed that among higher study year students, growth opportunity was the most crucial predictor for intention to enter the industry. Theoretical and practical implications were discussed.

This project addresses the critical issue of staff shortages and training inefficiencies in the hospitality industry, particularly focusing on the hotel sector. It connects with the urgent need for innovative, and effective training solutions to equip (inexperienced) staff with hospitality skills, thereby improving service quality and sustainable career prospects in the hotel industry. The project develops and tests immersive technologies (augmented and virtual reality, AR/VR) tailored to meet specific training needs of hotels. Traditional training methods such as personal trainings, seminars, and written manuals are proving inadequate in terms of learning effectiveness and job readiness, leading to high working pressure and poor staff well-being. This project aims to break this cycle by co-creating immersive training methods that promise to be more engaging and effective. Hotelschool The Hague has initiated steps in this direction by exploring AR and VR technologies for hotel staff training. This project builds on these efforts, aiming to develop accessible, immersive training tools specifically designed for the hotel sector. Specifically, this project aims to explore the effectiveness of these immersive trainings, an aspect largely overlooked in the rapid development of immersive technology solutions. The central research question is: How do immersive AR and VR training methods impact job readiness and learning effectiveness in the hotel sector? The one-year KIEM project period involves co-creating, implementing, and evaluating immersive training in collaboration with Hotelschool The Hague and Hyatt Andaz Amsterdam Prinsengracht Hotel in real-life settings. The partnership with Warp Industries, a leader in immersive technology, is crucial for the project’s success. Our findings will be co-created and multiplied through relevant sector associations such as House of Hospitality. This project aligns with the MV’s Impact Level 1: Transitions by promoting innovative training strategies that can lead to a fundamental shift in the hospitality industry, thereby enhancing social earning capacities.
Our world is changing rapidly as a result of societal and technological developments that create new opportunities and challenges. Extended Realities (XR) could provide solutions for the problems the world is facing. In this project we apply these novel solutions in food and hospitality. It aims to tackle fundamental questions on how to stimulate a healthy and vital society that is based on a sustainable and innovative economy. This project aims to answer the question: How can Extended Reality (XR) technologies be integrated in the design of immersive food experiences to stimulate sustainable consumption behavior? A multidisciplinary approach, that has demonstrated its strength in the creative industry, will be applied in the hospitality and food sector. The project investigates implications and design considerations for immersion through XR technology that can stimulate sustainable consumption behavior. Based on XR prototypes, physiological data will be collected using biometric measuring devices in combination with self-reports. The effect of stimuli on sustainable consumption behavior during the immersive experience will be tested to introduce XR implementations that can motivate long-term behavioral change in food consumption. The results of the project contribute towards developing innovations in the hospitality sector that can tackle global societal challenges by exploiting the impact of new technology and understanding of consumer behavior to promote a healthy lifestyle and economy. Next to academic publications and conference contributions, the project will develop a handbook for hospitality professionals. It will outline steps and design criteria for the implementation of XR technologies to create immersive experiences that can stimulate sustainable consumption behavior. The knowledge generated in the project will contribute to the development of the curriculum at the Academy for Hotel and Facility at Breda University of Applied Sciences by introducing a technology-driven experience design approach for the course Sustainable Strategic Business Design.
Hotelschool The Hague (HTH) was founded and funded in 1929 by the hospitality industry to create a hub where industry partners could gain and share new insights, skills and knowledge. Since then, it has become a professional operation with a solid international reputation in hospitality management. Though HTH has expanded considerably over the years, it has always remained true to its original mandate with a clear commitment to hospitality and a strong connection with the industry. Since its establishment, HTH has sharpened its focus, remaining regionally rooted with an increasingly concentrated international outlook. In line with its heritage, HTH established an ambitious research and internationalisation strategy through its Research Center in 2010 and has pursued that strategy ever since. The goals of the strategy are clear: to achieve international recognition for high quality research that has immediate practical application in the real world while driving towards sustainable development facilitated by an expansive international network and learning community. In pursuit of this ambition, HTH finds the perfect opportunity in this Pilot Richting Europa project to advance the progress made in its established research and internationalisation strategy and to focus the expansion of its international network towards industrial, governmental, and other private and public sector partners. Through this project, it is the ambition of HTH to increase the impact of its research area, City Hospitality. City Hospitality is mainly a nationally focussed initiative which would significantly benefit from international exchange with other European cities engaging in hospitality efforts. This will be achieved through (1) the expansion of its network of industrial and governmental partners and networks across Europe and (2) by increasing its participation in cooperative European projects, with the ultimate aim of leading a consortium for a European project by the end of the project year.
